  • 2 lb. clean chicken of the wood mushrooms
  • 6 cups of water
  • 3 teaspoons of salt
  • 4 cloves of crushed garlic
  • A few sprigs of fresh thyme
  • 2 cups of white wine vinegar

  1. Mix the water, salt, crushed garlic, and thyme in a stockpot and bring to a simmer.
  2. Add the mushrooms and cook them through for about 10 minutes until they’ve released their juices.
